These chocolate chip cookies are a treat that just about anybody can enjoy. And if you have a gluten allergy and love nuts, then these are definitely for you.

Gluten-free chocolate chip cookies that may help with fertility

Yields: 15

Ingredients

  • 1/2 cup cashews
  • 1/2 cup slivered almonds
  • 1/2 cup sucanat
  • 1 cup gluten free rolled oats
  • 2 T coconut oil
  • 2 T applesauce (or more oil)
  • 2 T milk
  • 1 tsp baking powder
  • 2 tsp vanilla beans or extract
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup chocolate chips

Directions

  1. Preheat oven to 350F
  2. In a blender or food processor, mix the cashews, almonds, and oats until a “meal” forms.
  3. Pour contents into a bowl with the rest of the dry ingredients.
  4. Mix all the wet ingredients in another bowl.
  5. Add dry ingredients to wet ingredients, then mix until combined.
  6. Drop cookies onto a lined baking sheet.
  7. Bake for about 10-12 minutes.
