Cauliflower and cheddar omelet

Mirepoix is a fancy way of saying chopped onion, celery, and carrots that you can use as the base of nearly any savory dish to make it taste totally awesome. This omelet has mirepoix that is lacking in onion (so you skip the heartburn) but not in rich, savory flavor. It’s also loaded with protein, to keep you extra-satisfied without feeling overly stuffed.

Makes 2 servings / Prep time: 5 minutes / Total time: 25 mintutes

Ingredients

  • 4 teaspoons olive oil, divided
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped carrots
  • 1 cup finely chopped cauliflower
  • Pinch of coarse sea salt
  • 4 large eggs
  • 1 tablespoon water
  • ½ teaspoon dried oregano
  • ½ cup shredded cheddar cheese

Directions

  1. In a medium skillet, heat 2 teaspoons of the oil over medium heat. Add the celery and carrots and sauté until they begin to soften, about 4 minutes.
  2. Add the cauliflower and salt and continue to cook, stirring often, until the cauliflower is soft and lightly browned, about 8 minutes more.
  3. Set aside the veggie mixture and lightly wipe out the skillet with a paper towel.
  4. In a bowl, whisk the eggs, water, and oregano. Heat the remaining 2 teaspoons oil in the skillet over medium heat.
  5. Add the egg mixture and, using a spatula, gently push through the egg mixture a couple times as it begins to cook so the liquid egg at the top makes contact with the pan’s surface.
  6. Cook the eggs until just firm, about 3½ minutes. 
  7. Sprinkle the veggie mixture and the cheese onto half of the cooked omelet and fold the empty side over the filling to cover. Cook until the cheese has melted, about 2 minutes more.

Per serving: 354 calories, 21 g protein, 5 g carbohydrates, 2 g fiber, 3 g total sugar, 28 g fat, 10.5 g saturated fat, 356 mg sodium, 362 mg potassium (10% DV), 277 mg calcium (28% DV), 30 mg magnesium (8% DV), 1.524 mcg B12 (25% DV), 0.294 mg B6 (15% DV), 2.4 mg iron (13% DV)
