Avocado toast

If you’re craving carbs first thing in the a.m., this avocado toast will become your best friend. The lime juice adds a refreshing flavor, the avocado delivers healthy fats, and the whole grain toast boasts B vitamins that can help ease nausea.

Makes 1 serving / Prep time: 5 minutes / Total time: 5 minutes

Ingredients

  • ½ teaspoon olive oil
  • 2 slices whole grain bread
  • ¾ ripe avocado
  • 1 teaspoon freshly squeezed lime juice
  • ⅛ teaspoon coarse sea salt, divided
  • 2 pinches chili powder or smoked paprika

Directions

  1. Heat the oil in a medium skillet over medium heat.
  2. Toast the bread until golden and crispy on both sides, about 5 minutes total. Or toast the bread in a toaster until golden.
  3. Mash the avocado, lime juice, and ¼ teaspoon of the salt together until only small lumps remain. 
  4. Spread the avocado mixture onto the toast and top each with a pinch of chili powder and the remaining ¼ teaspoon salt.

Per serving: 391 calories, 2 g protein, 50 g carbohydrates, 16 g fiber, 4 g total sugar, 21 g fat, 3.5 g saturated fat, 402 mg sodium, 547 mg potassium (16% DV), 101 mg calcium (10% DV), 34 mg magnesium (9% DV), 0 mcg B12 (0% DV), 0.319 mg B6 (16% DV), 3.2 mg iron (18% DV)
