Cucumber salad healthy pregnancy recipe

This fresh cucumber salad is loaded with lots of vegetables, and vitamins you need to help you have the healthiest pregnancy possible, like folate, Vitamin A, and fiber.

Serves: 1

Ingredients

Salad

  • 2 large English cucumbers
  • 1/2 onion
  • 2-3 tomatoes

Dressing

  • 3 Tbsp. white wine vinegar
  • 2 Tbsp. olive oil
  • 1 tsp. oregano
  • 1/8 tsp. salt

Toppings

Directions

  1. Make the dressing: add all ingredients to a small bowl and whisk to combine.
  2. Slice the cucumbers and onion.
  3. Dice tomatoes, removing excess juice. Place in a bowl.
  4. Add the dressing and toss to coat. Salt/pepper to taste if needed.

Best if refrigerated for at least an hour to let the flavors combine.
